Thai cooking

Let’s get cooking! It’s Saturday! Today in the mood for Thai. I’m going to make my red/green mixed curry. 

My shopping list:

prawns or chicken breast

baby corn and baby asparagus

snow peas

pineapple cubes and the juice

coconut milk

peanut butter

spices: lemon grass, lime leaves, garlic, ginger, red and green curry paste

How to:

fry all the spices first then add prawns or chicken, add corn, snow peas, pineapple, then add 2 tbsp of pineapple juice, 1 can of coconut milk and a tbsp of peanut butter ( I prefer the chunky). Eat it with fragrant jasmine rice – yummy!

It’s very quick and easy, and the best thing is that you can experiment with different vegetables.
